Wilton 8" Cookie Sticks are maintained in stock at our cookie bouquet business. Our dough is rolled out to 1/4" thick then cut and layed on top of the stick before baking. If the stick and the cookie separate, we use a line of Royal icing to keep the stick in place. For 2.5 - 3" cookies, we use thinner 6" Wilton cookie sticks and the same process. We've never been unhappy with Wilton sticks.

The large diameter of these makes it difficult to use for anything but the thickest of cookies, and it also affects their shape. works best if inserted after baking.
